Safe Food Temperatures

Cook meat until no longer pink inside.  Bake until juices run clear.  These are all terms of the past.  You will notice that recipes are now beginning to list internal temperatures to determine if meat is safely cooked.  Pull the following chart and place on your refrigerator.  Purchase a small food thermometer and insert in the thickest portion of the meat to obtain the temperature reading.  These figures are based on the Ohio Department of Agriculture and are used for meat inspection as well as the Ohio Food Code (the higher of the two numbers was used).
