Oatmeal Cherry Cookies

makes 2 1/2 dozen cookies

  • 3/4 cup sugar
  • 2 tablespoons margarine
  • 1 large egg
  • 2 tablespoons skim milk
  • 1/4 cup applesauce
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 1-1/4 cups quick cooking oats
  • 1/2 cup dried cherries
  • 1/4 cup toasted chopped walnuts*

Preheat oven to 350 degrees.

In the mixing bowl of an electric mixer, cream sugar and margarine on medium speed until smooth.

Slowly add egg and mix on medium speed for 1 minute.

Add milk and applesauce.  Mix for 1 more minute.  Scrape the sides of the bowl.

In a small bowl, combine flour, baking soda, cinnamon, nutmeg, and salt.  Slowly add to the creamed mixture, and mix on low speed for 2 minutes until blended.  Scrape the sides of the bowl.

Stir in oats, cherries, and toasted walnuts.

Drop by rounded teaspoons on a cookie sheet that has been sprayed with vegetable spray.  Bake at 350 degrees for 10-13 minutes, or until lightly browned.  Cook on a wire rack.

 * To toast walnuts, place chopped walnuts in a pie pan.  Bake at 350 for 7 minutes, or until nuts just turn brown.  Keep a careful eye on the walnuts - they can burn very fast.
