Couscous
with Dried Cranberries and Mandarin Oranges
serves 4
1 cup whole-wheat couscous
2 cups orange juice
3 tablespoons lemon juice
2 teaspoons fresh grated orange zest (use zester and pull just the orange rind
off)
1 teaspoon fresh ginger (ginger in a jar in produce section)
1/2 cup dried cranberries
1 15 ounce can mandarin oranges in water or light syrup off rinse syrup)
1/3 cup sliced unsalted almonds
1. Cook couscous according to package directions with
orange juice in place of water.
2. After couscous has cooked, add lemon juice, orange zest, ginger, and dried
cranberries. Gently stir in mandarin oranges and almonds.

Sodium: 60 milligrams
Fiber: 4 grams
