    Country Corn Chowder
    serves 4

 

1/4 cup coarsely chopped bacon (use bacon in a box - microwave) or low-fat sausage         
1/2 cup minced onion
3 cups diced raw potatoes
1/2 cup water
1/4 cup all-purpose flour
1 can (17 oz) creamed corn
1 1/2 cups evaporated skim milk
1-2 cups reduced-sodium chicken broth
1/4 cup chopped fresh dill (1 Tbsp fresh)
1/4 cup chopped fresh parsley

Add bacon to skillet.  Add onion and sauté.  Add potatoes and water.  Cover potatoes and cook over medium heat until potatoes are tender.  

When potatoes are tender, coat with flour.  Add creamed corn and evaporated skim milk.  Stir in chicken broth and heat until mixture thickens.  Top with fresh dill and parsley.

    Fat:  2.5 grams
    Saturated Fat:  2 grams
    Cholesterol:  23 milligrams
    Sodium:  525 milligrams
    Fiber:  2 grams
